Preheat oven to 350.
Cream butter, egg and sugars on high for 4 minutes.
Add bananas, one at a time on low speed and let mixer mash them.
Add soda, salt, oats and coconut, mix 30 seconds. Then add in flour and mix on low, just until blended.
Pour into greased or sprayed bread pan(s). Bake 20 min, quickly removed and add streusel, then finish baking the remaining 20-25 min. Test in center with toothpick for doneness. Remove from oven. Let stand 5 min, then dump out of pan and place right side up on cooling rack. While bread is still warm, but not hot, drizzle with maple glaze.
Baking directions are for 1 large loaf. If you choose to make 2 medium loaves, 3-4 small loaves or muffins, adjust/decrease the baking time.
This recipe is also delicious plain (without the streusel and glaze).
