BANANA BREAD

- 1/4 C butter softened
- 1 egg
- 1/2 C brown sugar
- 1/2 C granulated sugar
- 1 3/4 C flour
- 1/2 C oatmeal
- 1/2 C unsweetened coconut flakes
- 1 tsp baking soda
- 1/2 tsp salt
- 3 large ripe bananas they can even be brown–just not moldy
Streusel
- 1/3 C brown sugar
- 1/2 C oatmeal
- 1/2 C flour
- 1/4 C butter
Maple Glaze
- 1/4 C butter
- 1/2 C brown sugar
- 3 Tbsp milk
- 1/2 tsp Mapleline flavoring
- powdered sugar
Instructions
- Preheat oven to 350.
- Cream butter, egg and sugars on high for 4 minutes.
- Add bananas, one at a time on low speed and let mixer mash them.
- Add soda, salt, oats and coconut, mix 30 seconds. Then add in flour and mix on low, just until blended.
- Pour into greased or sprayed bread pan(s). Bake 20 min, quickly removed and add streusel, then finish baking the remaining 20-25 min. Test in center with toothpick for doneness. Remove from oven. Let stand 5 min, then dump out of pan and place right side up on cooling rack. While bread is still warm, but not hot, drizzle with maple glaze.
- Baking directions are for 1 large loaf. If you choose to make 2 medium loaves, 3-4 small loaves or muffins, adjust/decrease the baking time.
- This recipe is also delicious plain (without the streusel and glaze).
Streusel
- Mix all ingredients together with a pastry blender, fork or with your fingers until it forms a crumbly mixutre.
Maple Glaze
- Melt butter in saucepan, remove from heat and stir in brown sugar until dissolved. (don't boil–mixture will be smooth when brown sugar is dissolved.) Stir in milk and maple flavoring. Using a wire whisk, or beater, mix in enough powdered sugar to make a thin frosting that can be drizzled.
