2C“leftover” ham +if you have a ham bone to simmer in soup for flavor

1chopped onionor dried
1Ctiny chopped carrots
2TbsMolassesoptional

Instructions
Saute onion and carrots in butter. Add ham, 3-5 C water, and beans. Bring to a boil, then add 2 Tbs. molasses. Simmer 30-45 min. Before serving, remove ham bone if using one. Salt and pepper to taste.
Notes
Alterations Dry white beans work great, too, if you have time to pressure cook the soup or slow cook in the crock-pot. Otherwise, used canned beans if you need a soup in under an hour.If you don't have "leftover" ham, buy a ham steak with the bone in; dice/cube ham and put bone in to simmer for flavor.Sometimes we serve it over mashed potatoes and it's yummy!For a thicker soup broth, thicken with cornstarch and water.Note: Ham is usually salty enough without adding salt.
