Bran Muffins

Ingredients

  • 2 Cups Boiling Water
  • 2 Cups 100% All Bran Buds
  • 1 Cup Crisco or Shortening
  • 1 1/2 Cups Sugar
  • 4 Eggs
  • 5 Cups Flour
  • 4 Cups 40% Bran Flakes
  • 1 tsp Salt
  • 5 tsp Baking Soda
  • 1 Quart Buttermilk

Instructions

Combine

  • All Bran buds and boiling water and set aside for 5 mins until soft

Cream together

  • Mixture with shortening and sugar
  • Add eggs 1 at a time

Add

  • Flour, Bran flakes, Salt, Soda and mix
  • Then add Buttermilk
  • Add raisins and nuts if wanted

Baking

  • Spoon Batter into greased muffin Cups. Bake in Preheated 400 degree oven for about 20 minutes. Mini muffin tins take about 7 minutes give or take. Can be refrigerated up to three weeks.

Notes

Sooo Yummy when warm with some butter and jam!
